Although I don't mind leftovers, one thing that just doesn't taste the same when it's re-heated is mashed potatoes. Mom often used these to make potato pancakes (also called latka).
Ingredients:
- Left over mashed potatoes
- Butter or margarine
Heat frying pan or griddle over medium heat. Add 1 - 2 Tablespoons of butter to pan. Slide butter around until melted. Scoop potatoes into ball (I use an ice cream scoop). Flatten between your hands. Add to pan. Allow to brown, then flip over. Brown on second side. Transfer to paper towel lined plate. Add additional butter or margarine as needed. Serve with salt, pepper and ketchup, if desired.
